55ha of vines of Chenin Blanc, Cabernet Franc, Grolleau and Pineau d’Aunis are planted. The diversity of their cuvees is due to the different type of soils and exposure found: schist sandstone, quartz, gravel, and clay. Almost all of their wines are made with no addition of SO2, neither filtered or fined.
100% Cabernet Franc from the Vaillant family's vineyards in Bellevigne-en-Layon, south of Angers in the western Loire Valley. ("Cabernet Breton" is a nod to the Abbot Breton, who brought Cabernet Franc to Bourgeuil.) Certified organic and biodynamic farming. Fully destemmed and two weeks of maceration. Fermentation and aging for 6 months in used barrels, no added sulfites nor anything else. This wine is unfiltered.
Since the XVII century, located in the village of Thouarce in Anjou, the Vaillant family has passed on farmland from generations to generations. For the last ten years, sister and brothers have cultivated the estate using the biodynamic principles. The goal is to express the personality of each wines.
