Bonnet Ponson Brut Premier Cru
Made of the three grape varieties (Chardonnay, Pinot Noir and Pinot Meunier) in equal part, the blend always comes from three different vintages (the year of the harvest and the two precedent). After the first fermentation, the wines stay at least 8 month on their lees in stainless steel tank (70%), concrete vat (25%) or oak barrels (5%). The search of expression is at the center of our philosophy, and wines are not filtered before the bottling but just stabilized by the natural winter frost.
The bottles rest at least 4 years in cellars, time necessary to reach the perfect balance between complexity and finesse. Golden yellow and very tiny bubbles; result of a long aging. Intense yellow fruit fragrance, with a hint of white flower and butter pastry. The attack is sharp but the effervescence remains soft and airy, with creamy bubbles. The mid palate shows a nice structure where vinous flavors, fresh apple and white peach notes, perfectly balance. The finish is suave and persistent, leaving a delicate note of brioche and grilled almond on the aftertaste.
