The 'Dama' is composed of 85% Chardonnay and 15% Parellada, all organically grown on vines that were planted from 1975 to 1993. The vines are all estate-grown at an elevation of 252 meters and on soils that are made up of limestone and sand. Each grape variety is harvested, crushed and fermented separately in stainless steel tanks at low temperatures. Tirage and second fermentation occurs in the bottle typical of the 'Méthode Champenoise' for a minimum of 18 months and often longer, depending on the vintage. Then, disgorgement is followed by dosage. The wine is aged for a minimum of 18 months on its lees. Aromatically the wine is much more sophisticated and Champagne in style, with toasty notes of brioche, as well are ripe orchard fruits. On the palate, the wine possesses tiny, elegant bubbles, fresh pears, and warm baking spices. Organic Vegan
