Last summer David, the Grape Wrangler, was in Chablis cruising around when his host brought him to the caves of Bailly Lapiere, one of the major producers of Cremant in Burgundy.

The spectacular caves have supplied the stone for some of the greatest architectural works in Europe including the Pantheon, Notre Dame de Paris, Chartres Cathedral and more. The underground extraction probably began at the end of the medieval period and finally ceased around the beginning of the 20th century. The caves and their history are astonishing.

Around 1972, Bailly Lapiere began sparkling wine production in these caves and continue as they purchase grapes from over four hundred growers. The Reserve Brut is a blend of Pinot Noir, Chardonnay, Gamay and Aligote, all of the appellations varieties.

It is well rounded and full with a red apple and toasty nose with a mineral freshness and flavors of hazelnut and brioche.
