The history of Drappier Champagne dates back to 1808. But the history of the cellars and vineyards goes back to the 12th century when Saint Bernard had an annex built to Clairvaux Abbey in Urville.? These cellars where the wine is stored are among the oldest and most extensive in Europe. The cellars are also among the few that were not damaged during the two world wars.

It was Drappier that brought Pinot Noir to the Aube in the 1930's, a move that was mocked at the time?now it is by far the most planted grape in the region. A little more than half of the production is comes from their over 130 acres of estate vineyard. The other part comes from long term contracts. The wines go through malolactic, with very little sulphur. And use organic fertilizers.

Drappier also has the distinction of inventing the largest sized Champagne bottle, The Melchisedech, which holds the equivalent of 40 regular size bottles. They also bottle in 11 different sizes from quarter bottle to the Melchisedech. And? fermentation’s are done in all of the bottle sizes.?

This ros? is produced by leaving the juice with the skins for 3 days. After bottling, it is ?aged for 2-3 years in bottle.

Fleshy and supple in texture, showing a floral accent to its red berry compote and tangerine flavors. Lush and broad but lively too, finishing with a hint of spiciness and good floral persistence.
